Chef de Partie

We are seeking experienced Chef de Partie with a passion for food and cooking to join our kitchen team. Our organically farmed vegetable and herb gardens are central to our menu, and we work exclusively with whole, local fish and locally sourced meats.

Successful candidates will work closely with senior chefs as they progress in their culinary careers, learning and executing recipes based on seasonal ingredients, while upholding our farm-to-fork philosophy. You will also have the opportunity to work alongside Executive Chef Dervilla O’Flynn and the wider team.

Day-to-day duties will include:

Food Preparation and Service
Prepare, cook, and creatively present dishes to the required standard.
Ensure all dishes are prepared and served in a timely manner.
Prepare meat and fish in line with kitchen standards.

Quality, Stock, and Waste Control
Monitor portion sizes and support waste control measures.
Wrap, label, and store unused food stock at the end of each shift.

Menu Development and Team Support
Assist the Head Chef and Sous Chef with menu development, including creating new dishes and menu items.
Attend departmental training as required.

Hygiene, Health, and Safety
Comply with all food hygiene practices and food safety standards, including HACCP.
Support the day-to-day management of Health and Safety within the kitchen.
Maintain cleanliness by cleaning and sanitising the kitchen after service.

The ideal candidate will be a fluent English speaker. Previous experience in a similar role is an advantage, but not essential. Excellent personal presentation and grooming is essential. The candidate must be legally eligible to work in Ireland. Candidates must already hold valid permission to work in Ireland. We are not able to offer employment permit sponsorship.
