We had a super Easter at Ballymaloe. The first wisteria blossoms opened on the front of the house indicating that Summer is on the way. Regular guests enjoyed the warm long evenings sipping pre-dinner cocktails out the front. It was a busy weekend for the Ballymaloe bar!Over the past weeks we have been experimenting with fun and new cocktails. During a recent supper club several guest chefs came to Ballymaloe to contribute to the menu in both the restaurant and the bar. One of the guests, Sally McKenna, introduces us to her new book “Extreme Greens: Understanding Seaweed” and from it we experimented with seaweed in our drinks. That night we launched the “Dilisk & Rosemary Martini”. A simple to sip mix of vodka, lemon juice, rosemary and dilisk infused syrup and soda water. The drink was served in a martini glass, garnished with rosemary flowers and very well received! The garden is currently bursting with gorgeous rhubarb which has inspired another seasonal sip. A drop of pink rhubarb syrup in Prosecco makes for a simple and refreshing drink.Now, what will we create next month?
