We have a superb opportunity for a Head Chef to join our award-winning team at Ballymaloe House. The successful candidate will work with and report directly to an Executive Head Chef. 

The Role

The Head Chef will be responsible for heading up the kitchen team and creation of menus alongside the Executive Head Chef. Experience working in a similar style culinary operation is preferred.

You will be responsible for management of the service, set up, station stock levels, ensuring that the preparation and presentation of food complies with the required standards, costs are controlled, sustainability principles are adhered to whilst maximising the customer experience through the production of interesting, seasonal meals. Our menus change often, we cook with the seasonal produce from the walled garden, and local producers. Read more about our farm-to-fork principles.

 Day to day duties will include:

  • Managing the general day to day running of all aspects of the kitchen.
  • Preparing, cooking, and creatively presenting the dishes at the required standard.
  • Monitoring portions and waste control.
  • Overseeing the wrapping and storing of unused food stock at the end of the shift.
  • Responsible for the management of Health & Safety
  • Responsible for the maintenance of food hygiene practices and food safety standards (HACCP)
  • Responsible for Training within the Department.
  • To lead your team by example.
  • To display passion and optimism.
  • To constantly strive for innovative and imaginative menus, using farm-to-fork principles.
  • To ensure that all dishes are prepared in a timely fashion and to the high standard and presentation.

This is a full-time permanent position; the nature of the industry means that this role will include a variety of shifts and weekend work.
