Mags Coughlan grew up near the village of Carrigtwohill in East Cork. Having spent 15 years in marketing, operations and project management, she decided to embark on a new career in horticulture. After bumping into Darina Allen at a Slow Food event, Mags was put in touch with Susan Turner, Head Gardener at Ballymaloe. Mags soon began working with Susan and from her learnt the art of market gardening.
Mags has spent the past three years working within the walled garden at Ballymale House developing skills for growing fruit, vegetables, herbs and cut flowers. During this time Mags has completed the RHS Certificate in the Principles of Horticulture.
As full time gardener at Ballymaloe House Mags works closely with the kitchen chefs when deciding what to plant and grow. Each day Mags harvests the ripe fruit and chooses the finest vegetables to bring to the kitchen and from there the ever changing menus take shape.
