Gillian Hegarty, a native of West Cork, has worked in some of the worlds finest kitchens including The River Cafe (London), Theo Randalls and La Sala. Gillian respects the flavour of fresh produce and cooks both simply and delicately to encourage maximum flavour in everything she creates. She is often seen, just before service, flying by on the kitchen bike on her way to pick "last minute" fresh herbs just in time for dinner.
Gillian and Jason Fahey are the joint head chefs of Ballymaloe House. Together they write a new menu for each meal based on fresh garden vegetables and herbs, fish from the Ballycotton boats and locally farmed produce.
