We look forward to welcoming guest Chef Sunil Ghai who is not only the foremost Indian chef in Ireland, but Food & Wine’s Chef of the Year 2009 to Ballymaloe House next Tuesday evening the 26th of November. Sunil is the Executive Chef at Ananda Resturaunt in Dublin, he regularly spends time working with the team at Benares in London under renowned Michelin starred chef Atul Kochhar. On the night, Ballymaloe will also be offering a matching wine tasting menu. The wines have been chosen to compliment each course. A full wine list is also available.

Five Course Tasting Menu

Amuse Bouche

Semolina puff, chickpea, tamarind, coriander, mint chutney, gram flour vermicelli, stirred yoghurt with black salt, pomegranate 

Starter

St Tola goat’s cheese potato cake with basil and royal cumin, pear and walnut spiced chutney, pear compote, pickled shimji mushroom, garlic, walnut oil 

Scallop

Pan-fried scallop with turmeric and chilli, broccoli and coriander purée, celeriac, coconut foam, candied ginger & kumquat   

Lamb

Rack of Wicklow lamb, mint pesto, sweet potato with honey and lime, chickpea with chard, cinnamon, cardamom, and bay leaf

Dessert

Pear poached in wine and spices
