Raspberry Fool

Liquidise and then sieve raw fruit.
Dissolve sugar in water.
boil for 1 minute and leave to cool.
It should set to a jelly.
Boil again, if it does not.
Mix to taste with fruit and add whipped cream and stiffly beaten egg white.

White Soda Bread

Preheat the oven to 250deg C

Sieve the dry ingredients. Make a well in the centre. Pour in all the milk at once. Using 1 hand, with your fingers stiff and outstretched like a claw, stir in a full circular movement from the centre to the outside of the bowl in ever increasing circles. The dough should be softish, not too wet and sticky. When it all comes together, turn it out onto a well-floured work surface. Wash and dry your hands.

Gay Byrne: Live On Stage

After a sell-out show in March, the legendary broadcaster returns to share extraordinary moments from his fifty-year career. In This two-hour master class in comedic storytelling, Gaybo divulges "the greatest show biz stories never told".

Gay is doing only two Cork shows - the other in Inchydoney, West Cork - so we are delighted and honoured to have him back in Ballymaloe Grainstore.

The ethos of Ballymaloe in front of me

Runner Beans, Heritage Tomatoes, perfectly formed Cabbages are a few of the many delights we have in the Ballymaloe garden at the moment.

Everyday when I walk through the Garden I can see the ethos of Ballymaloe in front of me. Growing & serving the Best Vegetables to inspire us and create a menu full of our own seasonal produce.

Keeping up with the abundance of produce and doing it justice is a challenge in itself. What a fantastic way to cook
