Wild Garlic is growing in abundance in the woodlands and is transformed by the Ballymaloe chefs into wild garlic soup, gnocchi and pesto.
In the cider orchard, there are almost 350 trees that have been pruned before the buds start to burst - as the trees are young, we're formative pruning the trees into an open 'goblet' shape.
The glasshouse is a hive of activity with sowing and growing! Lots of salad crops, tomatoes and annual flowers have been sown - many of which need the heat of the propagator to germinate.
Outside in the walled garden the soil is still a little too cold for direct sowings so the work is now to clear last years crops to get ready to spread manure in the coming weeks. Also plenty of working keeping on top of perennial weeds by covering with mypex.
